Róisín O’Sullivan

Róisín O’Sullivan (BSc) is a research master’s student working on our Irish Grass-fed Dairy pillar. Her project involves the authentication of Irish dairy products using stable isotope ratio analysis (SIRA). Her previous research experience was developed while completing her undergraduate degree in Food Science and in the R&D lab of Glanbia Ingredients Ireland. Her final year project, for which she won first prize in her year, involved the enzymatic hydrolysis of vegetable proteins. She comes from a dairy farming background and her research interests include protein science, dairy science and processing, and analytical methods of authentication.
