Principal investigator, Fermented Dairy Ingredients

Prof Denis Shields has been Full Professor of Clinical Bioinformatics at UCD since 2005. Before that he worked in industry and academia, involved in clinical and basic research. His role in Food for Health Ireland is to study proteolysis and peptides derived from this, as well as genomic analysis of strains of bacteria used in fermenting bioactive foods.
