Ailbhe is currently studying for a Research Masters in ‘Factors affecting the Scale-up of Fermented Dairy Powders’ based in Teagasc, Moorepark, Fermoy and Trinity College Dublin. This is a joint research project between Teagasc, Trinity and Food for Health Ireland. The role entails supporting the work of FHI in the area of fermented dairy ingredients. This involves investigating the effects of processing and purification on the bio-activity and bio-availability of lab-scale fermentates. Ailbhe holds a BA Int. in Italian literature and Classical Studies and an MA Int. in Translation of Italian Theatre and Comparative Studies. She is passionate about nutrition and has also completed an MSc in Food, Nutrition and Health in UCD.
