Dr Emma Feeney (BSc, PhD) is an Assistant Professor in the Department of Food Science at UCD’s Institute of Food and Health, with expertise spanning the areas of nutrition, genetics, sensory evaluation and food functionality. She has conducted food intake studies looking at taste perception, food preferences, and intake and response to a variety of dairy ingredients and food structures. She has been involved in all three phases of Food for Health Ireland, and is currently a principal investigator in the Healthy Cheese research pillar. Her research interests include dairy food consumption patterns and their contribution to health; food structure and the impact on digestion, absorption and assimilation of nutrients; and sensory evaluation and individual variation in perception.
