Diarmuid Sheehan
Principal Investigator, Healthy Cheese
Dr Diarmuid Sheehan (BSc, MSc, PhD) is a senior research officer at the Teagasc Food Research Centre in Moorepark. As a principal investigator with Food for Health Ireland, his focus is on mechanistic studies relating to natural cheese. Coming from a background in technology transfer, he has published over 50 peer-reviewed papers in the field of cheese chemistry and technology. His research group is focused on areas such as: dairy food structure-function and its influence on health properties; food structuring through casein-polymer interactions; physicochemical influences on bacterial metabolic activity within food matrices; reducing carbon footprint/ghg emissions in cheese production; and small solute entrapment and diffusivity within dairy matrices.
