André Brodkorb

Dr André Brodkorb (BSc, MSc, PhD) is the co-lead on Food for Health Ireland’s grass-fed dairy research pillar. He has an MSc in Chemistry and a PhD in Bio-Physical Chemistry. His research interests include the structure/function relationship of food proteins from farm to processing to gut; the structural changes of food and food components during in vitro and in vivo gastrointestinal digestion; food colloids and protein colloids; and microencapsulation for the protection of sensitive food ingredients.
