Tom O’Callaghan

Dr Tom O’Callaghan (BSc, PhD) graduated from UCC with a BSc in Food Science in 2014. Following this, he took up the position of assistant production manager with Carbery Food Ingredients. In 2015, he began his PhD in Science based in Teagasc Moorepark examining the impact of pasture-based feeding systems on the composition and quality of milk and dairy products. He took up the role of Permanent Research Officer in Teagasc’s Dept of Food Chemistry and Technology. His research programme currently focuses on dairy chemistry and processing across the supply chain, with particular emphasis on the effects of farming practices, cow feeding systems and dairy processing technologies on the quality and functional characteristics of milk and dairy products.
