Adam Cogan (BSc, Walsh Scholar) joined Food for Health Ireland as an MSc research student in Food and Nutritional Science, based in the Teagasc Food Research Centre in Moorepark. The ‘Cheese Matrix Effect’ is an emerging and very current area of research, whereby the overall health impact of a food should be accounted for, rather than taking a reductionist approach of measuring its individual components. While assisting the centre’s healthy cheese pillar, his project will build on recent intervention studies which showed that consumption of natural cheese did not have a negative impact on blood lipid profiles. It will also seek to provide a mechanistic basis for further understanding of this ‘Cheese Matrix Effect’, and how heat may influence this phenomenon.
